Smoked Peach Cobbler

List of Ingredients:

  • 6 large peaches, peeled and sliced

  • 1/4 cup brown sugar

  • 1 tablespoon cornstarch

  • 1 tablespoon lemon juice

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, cut into small pieces

  • 1 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, at room temperature

  • 1/2 cup buttermilk

  • Vanilla ice cream, for serving

Instructions:

  1. Preheat your smoker to 225°F (107°C).

  2. In a mixing bowl, toss the peach slices with brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Stir until well combined.

  3. Spread the peach mixture evenly in a 9-inch (23 cm) square baking dish.

  4. Dot the top of the peach mixture with small pieces of unsalted butter.

  5. In another mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

  6. Add the room-temperature butter and buttermilk to the bowl and mix until a thick batter forms.

  7. Drop spoonfuls of the batter on top of the peaches, leaving some gaps for the smoke to penetrate.

  8. Place the cobbler dish on the smoker rack and smoke for 2-3 hours, or until the peaches are tender and the topping is golden brown.

  9. Let the cobbler cool for a few minutes before serving with vanilla ice cream.

Notes:

  • You can use canned or frozen peaches if fresh peaches are not in season.

  • If you don't have a smoker, you can also bake the cobbler in the oven at 375°F (190°C) for 35-40 minutes.

  • Feel free to adjust the sweetness or spiciness of the cobbler to your liking by adding more or less sugar, cinnamon, or nutmeg.
